The Bakery That Changed Everything

If you've ever had one of our croissants or muffins alongside your latte, you've tasted more than just a pastry; you've tasted a story. And like all the best stories, ours has a Galindo twist.
Meet Jon
Back in the early days of our coffeeshop, we had a regular customer named Jon. He was a New Jersey guy with a strong accent and an adventurous spirit. New Jersey to Arizona to California to Texas - and a track record of opening pizza shacks, sandwich shops, and bakeries that worked. It was in his blood. He’d chat with us, talk shop, and ask a million “Coffee 101” questions as he planned his next big idea: opening a café-bakery hybrid inside American Furniture Warehouse. Odd? Definitely. But with his history, we had no doubt it would be a hit.
Months later, we'd see his sandwiches pop up on Facebook Foodie groups and smile "Oh man, he did it!
An Unexpected Turn
About eight months later, Jon came to us with a new question: not about coffee, but about legacy. Family matters were calling him back to Arizona, and he didn't want to see everything he had started here fall apart. He trusted us. He asked us to take it over.
For the next two months, we shadowed him tirelessly - 6:30 a.m. to 5:00 p.m. - learning every detail. Restaurant supply runs, warehouse pick-ups, grocery hauls, production systems, baking, grilling, cooking, rolling dough, mastering the proofing process. It was a crash course in bakery bootcamp. And let me tell you... he kicked our asses.
We saw firsthand that Jon had built something good, but he was running it as a one-man show. He did everything himself. And while that was inspiring, it also showed us the struggles and where we could tweak things to make this bakery into something truly great.
Making It Our Own
Every day was a grind, but it paid off. The bakery became the backbone of our coffeeshop, allowing us to offer pastries and baked goods that match the same standard of care as our coffee and cocktails.
Two Sides of the Same Story
Today, the coffeeshop and bakery aren't separate stories; they're chapters in the same book. The bakery gives us the ability to provide high-quality pastries and baked goods to pair with every latte, cappuccino, or cocktail. The coffeeshop gives those baked goods a second home, a table, and a community to gather around.
And at the center of it all, there's Jon: whose trust, mentorship, and faith in us made this next chapter possible.
Full Circle
What started as Jon's vision became one of the most important chapters in our journey. The bakery isn't just where the croissants rise or the muffins bake - it's the backbone of our coffeeshop, the reason we can serve quality pastries alongside your latte or cappuccino, and proof that community shapes everything we do.
We're proud of the hard work, the long hours, and the lessons we learned during those first chaotic months. But more than that, we're proud of how the bakery and coffeeshop now move together as two spaces, and one mission: to serve you something made with care. I don't see Galindo's without a bakery now.
At the end of the day, our success is baked into every loaf, brewed into every cup, and shared with every person who walks through our doors. We thank all of you for giving us the opportunity to serve you and to give you more experiences with us.
