Before opening our shop, we weren't just two adults who loved coffee, we wanted to fully understand the ins and outs of it. So we went to coffee school. Yes..believe it or not, that's an actual thing. We attended the Texas Coffee School in Fort Worth. We dove deep into the world of beans, learning about regions, flavor notes, and how to properly taste and appreciate what's in your cup.

We learned why Ethiopian coffees taste fruity, why Brazilian beans are often nutty and smooth, and what it really means when people talk about "body" or "acidity." It was more than just caffeine, it was science, culture, and connection all at once.

That experience changed how we think about every cup we brew. We didn't just want to serve coffee; we wanted to serve something we truly understood, something worth sipping slowly.

So, if you've ever taken that first sip and thought, "It just tastes like... coffee," this one's for you.

☕️ 1. It Starts Before the Sip

Tasting coffee actually begins before it touches your tongue.

When you lift the cup, take a second to notice the aroma: is it Nutty? Floral? Chocolatey? Fruity? Bright? Your nose gives you the first clues about what's to come.

At the shop, we always tell guests that great coffee smells alive. It shouldn't smell burnt or bitter. That aroma comes from the bean's origin, how it was roasted, and how it's brewed.

🌍 2. The Story in the Bean

Every bean has a passport.

Different origins bring different flavors:

  • Ethiopian beans often taste bright, pungent (in a good way) and fruity - my personal favorite
  • Salvadorian beans lean chocolatey and smooth - a favorite here at the shop.
  • Brazilian beans give nutty, caramel notes.

We source beans that speak for themselves, working closely with our roaster (who works closely with the farmers) to ensure those natural notes shine through.

The next time you sip, think about where your coffee came from, it's likely traveled further than most of us.

🔬 3. Brew Matters (A Lot)

Here's a secret: coffee can be completely different depending on how it's brewed.

  • Espresso = concentrated, bold, velvety.
  • Pour-over = clean, balanced, delicate.
  • Cold brew = smooth, low-acid, chocolatey.

At Galindo's, we experiment with brewing methods that highlight the bean's best features. It's kind of like music, every method plays a different instrument in the same song.

👅 4. Taste Like a Pro (Without Being One)

When you sip, don't just gulp, let it roll across your tongue. You actually want to suck in air as you begin to slurp the coffee. We teach all of our baristas on the first day of training how to properly taste the espresso. Then you can ask yourself:

  • Is it sweet, bitter, or acidic?
  • Does it feel light, silky, or heavy?
  • What flavors linger after the sip?

It might sound fancy, but once you start paying attention, your palate gets smarter. You'll start noticing when something tastes "off," or when it's perfectly balanced and that's when you know you've entered the true art of figuring out different regions of coffee.

💛 5. Why It Matters to Us

We don't serve coffee just to keep you awake (though we know that helps).

We serve it to connect people, to show that what's in your cup can be both comforting and exciting. Every batch we brew, every bean we grind, and every latte we pour is a reminder that coffee is meant to be savored, not rushed.

So the next time you stop by, take a deep breath, smell your cup, and really taste it.

We promise you'll find something new every time.
